Simple Sesame Snacks
School holidays start and I swear we eat twice as much food as we normally would! I’m always finding someone poking around in the fridge or checking our treat box for something ‘good’ to eat. Apparently there’s nothing, even though the pantry is full. For goodness sake just grab a piece of fruit or make a salad wrap and get out of the kitchen!!!
Having four big kids seems to means we need to have snacks made up all the time and these little beauties are fantastic to have on hand. They have just a enough sweetness for the kids to consider them a treat, and yet are high enough in protein, with all the sesame seeds and nut flour in them, to help to keep their belly’s fuller for longer! The best thing about them is that they only have four ingredients and you can have them done within about 20 minutes. I bet you’d love the recipe right?
- 2 cups of sesame seeds (lightly toasted)
- 1 cup of almond meal
- 1/4 cup of melted coconut oil
- 1/2 cup of honey
Mix the sesame seeds and almond meal together in a bowl, then add the melted coconut oil and honey and mix through thoroughly.
Spread half the mixture between two pieces of baking paper and roll out with a rolling pin (the thinner the mixture the crisper your snack will end up). Repeat process and place on two baking trays with the top layer of baking paper removed. Bake in a moderate over for 1o minutes or until golden brown. Leave to cool for a few minutes before slicing and then leave until it’s totally cooled.
Store in a airtight container, if they last that long!!
